For more than 180 years, Houston, Texas, has been the meeting place of many global cuisines, leading to the creation of some indelible iconic dishes. It’s the American launch pad of Mexican fajitas, an ambassador of Viet-Cajun cuisine and European-style kolaches, and one of the best cities in the state for Texas barbecue. But with all that goodness, what are the dishes diners shouldn’t live without trying at least once?
It’s difficult to narrow, but Eater Houston has taken on the task of continuously updating this slate of iconic dishes to keep locals and travelers up to date on which should be added to their Space City dining bucket lists. From Houston pastries and biscuits with a deep history to soups that have a cult following, here’s a perfect starting point for exploration of Houston’s culinary culture and its quintessential dishes.
Tacos Doña Lena
There isn’t a taco — or torta, for that matter — not worth trying at Tacos Dona Lena, but if you had to settle on the most iconic dish, it would be the tacos de birria. Corn tortillas are generously stuffed with beef birria, dressed with cilantro and onion, and presented with a homemade consomé for the dipping. If you prefer things a little cheesier, opt for its quesabirria tacos — corn tortillas packed with birria and cheese, then grilled to molten perfection.
